
When faced with a snow day and a slightly unprepared larder, you have to just fake it. Yesterday Doodle and I found ourselves snowed in and in need of cookies. He read and compared several recipes against what we had on hand and this is what we came up with. Not exactly original but quite tasty.
I have an aversion to eating things that are swathed in powdered sugar so we opted for the glaze to boost the lemon flavour and avoid the powdered sugar ick. Most recipes called for almonds or walnuts...we had a handful of cashews left by a friend so we used those instead. No eggs, so um..we didn't use them. We had milk, but you could certainly use water.
Lemon Snowball cookies
Dough
1 cup softened butter
1/2 cup powdered sugar
1 tsp vanilla
1/4 tsp salt
1/2 cup finely chopped cashews
2 1/4 cup all purpose flour
juice of one lemon
zest of one lemon finely chopped
Glaze
Juice of one lemon
3 tablespoons milk
enough powdered sugar to make a thick glaze.
Cream butter, vanilla and sugar together. Add lemon juice and zest. When combined add salt, cashews and flour in batches.
Chill for one hour. Roll dough into one inch balls and bake at 350 degrees. 5-10 minutes. Do not brown.
Cool cookies and dip into glaze. Allow glaze to harden, store in airtight container.
